Rare smoked beef sandwiches with sour cream horseradish sauce

  • 1 bottom round roast, fat trimmed
  • Salt and pepper
  • Stone ground mustard
  • 12 rolls/bread
  • 1 red onion, sliced thin
Sour Cream Horseradish Sauce
  • 1 cup sour cream
  • ¼ cup (or to taste) freshly grated horseradish
  • 1 tablespoon champagne or white wine vinegar
  • 1 handful chopped chives
  1. Prepare gril or smoker for indirect cooking at 225F with pecan, apple, hickory or cherry chips/chunks
  2. Salt and pepper the roast and apply a thin layer of stone ground mustard
  3. Place the roast on the grill/smoker over indirect heat until it reaches 120F internal temperature.
  4. Remove the roast from the cooker and rest in foil for 20 minutes.
  5. Slice the roast very thin, pile onto buns/bread, add a dollop of sour cream horseradish sauce, red onion, and serve
Sour Cream Horseradish Sauce
  1. Combine all ingredients the day before using, and taste for seasoning; adjust salt and pepper as needed.
  2. Refrigerate until needed.
