October 4 Ingredient Challenge

Last month’s four ingredient challenge left a bit to be desired for me. I’m sorry, but I’m just not a fan of tofu. It’s not that good for you, really; it’s just a vegetable protein alternative to meat. I’m not a vegetarian, so I’d rather have lean meat. Or bacon.

This month brought more of a Halloween theme, with some good fall apples thrown in. The ingredients for this month are:

  • Chicken
  • Apples
  • Brown Rice
  • Pumpkin

Not a bad list to put together for a challenge. However, I don’t really do much with pumpkin; I don’t even like pumpkin pie, so I had to think on this one a bit.

Luckily, I was checking out Pinterest, a new way to share stuff around the web that you like with others (I really like it, by the way). While doing so, I came across a photo of a pumpkin with guacamole and decided I had to use that idea for this.

So I made my ingredients… Brown rice boiled on the stove, with apple slices and chicken grilled on the Big Green Egg. I did some work with the pumpkin while the grill was chugging along, too.

I combined the rice and apples, then cut up the chicken breast (with just salt and pepper for seasoning) and added that. To give it some flavor, I added one of my favorite sauces, Hot Squeeze, a sweet, spice chipotle sauce. This stuff really is great stuff; it would even be good on ice cream, I think! I added just about a tablespoon, just enough to mix everything together.

    • Thanks, Chris. It was kind of fun. We’re having a party this weekend, and I’m trying to think of a good way to use the puking pumpkin for something for that, too!
