On Tuesday, I had just enough time to do one more practice run before this coming weekend’s Beringer Great Steak Challenge Region 8 competition in Royal Oak, Michigan. I grilled a 1 1/2″ thick ribeye, using the exact recipe I turned in to Beringer, with a coffee/brown sugar rub and a coffee/wine/thyme sauce.
The steak turned out great, and was plated just before my 30 minutes were up. The recipe calls for some time marinating, but with only 30 minutes to do a steak this thick, the marinating time will only be a couple of minutes!
I didn’t get a great photo of it, because I had to leave right after, but mostly because my camera battery was dead!
I hadn’t done the recipe for a while, and started doing the practice thinking that I just wasn’t sure why I was picked as a finalist in the region. I grilled the steak, making sure the crust didn’t burn that it got some good heat on it. It rested for a few minutes, then I sliced it and added the sauce. I took a bite of one of the slices and realized that this was a competition quality steak!

With college football starting tonight, I’m just glad I’m going to Royal Oak and not Ann Arbor… I can’t wait for tonight’s game against Marshall!

First — good luck on the competition! I was in a local one this summer (my first). While I didn’t win, it was a great experience. Sounds like you have a good steak to cook!
Second — can you use a vacuum sealer (like a save a meal) to marinate the steak in? From what I understand, that helps intensify the process, so less time gets more results. I think there are some hand pump versions — but I don’t know how good they are. Might be worth considering and looking into.
Third — GO BUCKS! I didn’t expect much of a game last night — it’s just exciting to have the season start. Looking forward with great expectations fr the year.

John, I thought about the vacuum seal bit, but I don’t think 5 minutes will matter much. I think it will work out, though. And it was good to see the Buckeyes play at a level above their opponents instead of barely winning.
