The Christmas Countdown continues, too! It’s now 23 days until Christmas!!! Our tree is standing, and the giant kitten is leaving it alone, so we’ll be decorating it tomorrow night… While Rudolph is on. We have the DVD, but CBS is showing Rudolph in HD!

To finish up the Thanksgiving Day leftovers, I realized I needed to acknowledge a gift from the POM company.  I was sent a case of POM pomegranate juice about a month ago.  The POM blogger contacted me about a recipe contest they were doing, but I got to it too late.  However, the company was kind enough to send me a case of juice to try out.  I’d had it before, but I have to admit that I didn’t remember if I even liked it.

Pomegranate juice is possibly the best juice to drink, with all kinds of health benefits.  Please check out the POM site to read more about the healthy aspects of the juice.  The main part of the juice to me is that I LOVED it!  It’s similar to cranberry juice, but a bit less tart, and a bit sweeter.  A really nice blend.  POM is available in several mixes of juices, but I found I really like it on its own over ice.  It would also be a good ice tea blend.

So how does this fit with turkey leftovers? Simple… Pomegranate Turkey Salad, with POM/bourbon sauce!

I cut up about a pound of leftover turkey, about 1/3 of a medium sweet onion, a handful of chopped chives and a scoop of mayo (just enough to mix everything together). At the end, I added the seeds of about half of a pomegranate. The seeds are great; they’re tart and sweet, with a nutty flavor and crunch. They’re good for taste and texture both.

On the stove, I poured about 4 ounces of POM juice, a couple ounces of good bourbon, then added some ground ancho chile, salt and pepper, and reduced it down by half. I put it in a squeeze bottle and used as a dressing over the salad.

The results are a smoky turkey salad with a tart/sweet crunch, layered with the sweet bourbon/POM mixture. This is easily my favorite turkey salad ever!
