
On the startup of Get Your Grill On, the editor, Robert Fernandez, has asked for photos of meat. I thought about what post to send him pictures from, and I decided it would be a good time to just go through the last 10 months and pull out some good ol’ meat photos… So here they are!
The first photo here is what I consider the King of Steaks, prime grade porterhouse steaks on the grill. The steaks pictured here were done for my wife’s birthday party back in July, along with basil butter grilled lobsters.
In Carmel, IN, in May, we entered these little sandwiches in the Anything Butt Category. It’s my version of pit beef sandwiches. Small, fresh, rosemary buns, some horseradish sauce, topped with rare, slow-cooked beef off the smoker.
Brisket, rested after being barbecued for 14 hours. This was a practice cook that made for some really good dinner!
Practices eventually led to taking a 5th place finish (out of 56) at the Taste of Grand Rapids.
Ok, this isn’t a photo of meat, but it is the sauce being made for steak au poivre, which I made for my wife on Valentine’s Day. It’s very rich, and very good… And who doesn’t like to play with fire?
Ribs just off the smoker, nice and hot and full of smoke and barbecue flavor.

Speaking of pulled pork, I’m sure my teammate, Mark, and I will never forget the 2nd weekend of October, when we cooked over 800 lbs of pork butts.
I tried to do a bit of a step-by-step in making armadillo eggs. These are what pork sausage was meant to be!
Armadillo eggs and fatties… They’re so simple, yet so good.
And finally, prime rib. This was one of my earliest entries to the blog, but it’s going to become a holiday tradition at my house, as I think we’re going to do another large prime rib again this Christmas. Nothing but beef heaven in each and every bite!
