By the way the rib cook went great on Saturday. I tried spare ribs for the first time. I trimmed them but learned some valuable lessons for the next time on proper trimming. Using the charcoal pan as a heat baffle worked like a charm. Thanks for the tip. I had very little problems maintaining a 225 temp. I went with my spicy apple glaze. It is a recipe my wife just loves. For the first time I attempted making my own rub. I got a little tweaking to do there, but all in all a great cook. I impressed my sister-in-law and brother-in-law who up until now boil the ribs and throw on a gas grill. I do believe we may have another convert.
Todd, when you become a KCBS judge, you take this oath, and somewhere in there you promise to promote barbecue. Any time you get a convert like your family, you’re doing a great job! More often than not, I think just having them try ribs done the right way prove the point.
For your own rub, it’s good to start with one you like from a book or online, then start tweaking it here and there until it has what you’re looking for. I’ve heard that changing three or more ingredients makes it yours! And once you do a few racks of ribs, they’ll be a cinch to trim.
