Getting ready for competition number 2

It’s great to have a wife that’s good at organizing (my wife’s great anyway, but this is a good extra)!

After
the debacle of big cardboard boxes in Carmel, we got clear plastic bins
to put everything in for our next competition.  Not only that, but the
stuff in them was organized as to purpose so I didn’t have to hunt for
everything (there was still some hunting, but not as much).

The
one item we added from the first competition for equipment (other than
an extra Chargriller) was an electric knife.  This worked great, until
it got too hot to hold!  next t ime, I’ll be using it wearing a welding
glove if I can!

So here was our basic organization:

  1. First was easy… pecan logettes all in one bin
  2. Towels.  The towels and rags to wash dishes went in one bin… The
    towels are for filling up the coolers when hot meat is being kept hot,
    so the airspace is taken up instead of working against us.
  3. Foil and baggies and stuff like that… we go through a LOT of
    heavy duty Reynolds wrap.  I’ve tried other brands, but can’t find any
    I like as well.
  4. Knives, cutting boards, utentils in general.  This is a smaller
    bin.  And the knives I use are Shun knives; if you haven’t tried them,
    go find one and try it… GREAT knives, and they look cool, too!
  5. Spices.  This is a smaller bin, too, but it’s packed full.  I
    premix my rubs, but I have all the ingredients just in case I need them
  6. Decorations… My wife has found us some great stuff… I warlking
    stuffed pig that oinks and moves its nose, and a walking, crowing
    rooster.  We turn these on as our entries are off.  We need to find a
    good cow, though, that makes noise.  I’ve seen the mad cow, but there’s
    something just wrong about that.
  7. I’m sure there’s more, but that’s all I can think of without going out to look, and I’m too lazy to look right now!

We also have one EZ up, and have borrowed another (which I STILL
need to return!), but we’re going to buy another.  I think I can rig
them together with sides, and maybe come up with a way to put in A/C!
We take a turkey fryer to light the charcoal, so we also have a propane
tank… it’s ok to use for that, but not for any cooking.  The thing we
still need to add is a long hose and a better long extension cord. 

So before Madison, all this stuff was organized and ready to go…

Then the trip there… what a fiasco… next time.
