You make great barbecue; time to open a restaurant, right???

Your wife loves what you cook for her, your dad tells you that you make
the best ribs he’s ever had (and he’s had lots), your family won’t eat
barbecue even at the ‘good’ joints.  Barbecue has become a passion;
aren’t you supposed to do what you’re passionate about for a living if
possible? 

I was starting to think that way, and I even had a
plan where I’d start small and work my way up.  It doesn’t take too
much to have a roadside drive up pit, right?

Then I started to think about it…

Not
only will I have to at least supervise the cooking, but I have to deal
with a leased spot, local ordinances, health departments, bad weather,
employees that aren’t necessarily professional, cleaning the place up,
keeping product in place and throwing out what’s not sold…

After
a long list of pros, I got a longer list of cons, the most important of
which was that I’d be taking an avocation and potentially ruining it
for myself.  I don’t want to take something I enjoy a lot and force
myself to do it day in and day out.  I just don’t want to chance losing
the fun.

There has to be some happy medium, and I’m going to try
to find it.  I’m goind to cater now and then, when I get jobs and when
I want to take them.  It’s going to be for fun with, hopefully, a
little profit.  I get more of a kick out of people liking my food than
I would out of selling it anyway, but I’ll put a fair market price on
the product.  And the good thing about being able to cook more than
just brisket, pork and chicken is that I can cater to a wide
audience…  I can cook inside or outside, and have a pretty good
handle on how to put together some great meals.

So Bucky
McOinkum’s Barbecue is very unlikely to be posted as a restaurant sign,
but it’s still a good name and a good looking logo, I think… and I’ll
have fun catering.  My wife will get involved.. she makes great cole
slaw…  And, hopefully, I’ll serve some good food to people in SW
Ohio, and let them know what good barbecue is!
